One of the Ethernet ports on our modem/router went bad, so I ordered an Ethernet switch from Monoprice.

Is it best to keep the current Ethernet cables plugged into the router, or plug all of the cables into the Ethernet switch? Does it matter?

It doesn't matter at all from a performance perspective but it may from an administrative one. If you have everything connected to the same physical device then you can usually monitor their stats from the same common management interface. If you connect a switch to another switch then you will likely not be able to monitor downstream ports at an individual level unless the downstream device has it's own management interface, which is rare at the consumer level.
